One of the goals I have set for myself this year is to try every recipe in Alicia Silverstone’s book The Kind Diet. First up…Radicchio Pizza with Truffle Oil on page 144.
Anyone who knows me personally knows that one of my very most favorite foods to eat is pizza. I could eat it 24/7. But that’s a lot of cheese. Not very animal friendly (digestive friendly either). So Alicia has given us a vegan and cheese free option.
Let’s take a look at the ingredients:
Pizza Crust. We used a sprouted crust I found at Whole Foods (very tasty)
White Truffle Oil
Radicchio (red cabbage like veggie)
Olive Oil
Salt and Pepper
The recipe was pretty simple (even more so since the hubby made it
). Just heat the crust. Shred the Radicchio and toss with the truffle oil and spices. Top the pizza and put in the oven until the radicchio starts to wilt. Voila.
Overall, Tree Hugging Dad and I thought it was just okay. The crust was awesome and the radicchio was fine but I didn’t particularly care for the Truffle Oil. It was kinda woodsy. I think maybe if we were to try different oil and spices, this might actually be a pretty tasty and cheese free pizza option.
